The coffee trees belong to the Red Catuai and Yellow Caparao varieties, and the beans are processed using a unique, experimental method - a plantation patent. Ripe coffee cherries are picked by hand, then anaerobically fermented in special barrels for 40-60 hours, along with tropical fruits such as mango, bananas, jackfruit and passion fruit! Thanks to this innovation, the coffee is endowed with an extremely complex flavor profile, overflowing with aromas of fruits such as mango and passion fruit, but also noble aromas of caramel.
