We try to map the new trends in the field of coffee for the summer season of this year, and we come up with five trends that are almost certain to occupy professionals in the industry, but also those who love coffee!

Coffee recipes from around the world: The revival of ethnic recipes and their adaptation to local data is not uncommon for the gastronomy and coffee industry, as it is a phenomenon that happens quite often. This year, those who watch the coffee scene have singled out some coffee cultures that are expected to star. The beginning is made with the internet quarantine star, Dalgona from Korea, a thick and photogenic instant coffee that resembles frappe, and that is served (but also prepared at home) more and more, and in various variations (Pumpkin Spice Dalgona, Dirty Dalgona Etc.). Remaining in Asia, Vietnamese Coffee, executed in the traditional way, is equally photogenic and instragrammable, and is also expected to come to the fore, creating trends on social media. Finally, many speak of a "total resurgence" of Greek coffee, as it is in line with the principles of slow food, but also carries a retro air that can target a specific audience successfully.

Coffee is easy to make at home: With the "intubated" focus and travel restrictions around the world being lifted, home coffee consumption has not only risen sharply, but has begun to change as a whole. we enjoy our coffee. On the one hand, there is an increased demand for coffee machines, barista tools and capsules, but on the other hand, there are many companies that invest in the production of instant coffee, but also in the distribution of bottled coffee drinks, ready for consumption. Many economic analysts see in these moves trends that will concern us in the summer of 2021, and it remains to be seen whether their forecasts will prove correct.

Recyclable & Biodegradable Coffee Capsules: With plastic constantly losing ground as a material and recycling gaining more and more fans, the coffee industry could not remain unaffected. As it is a fact that the environmental footprint of coffee capsules is extremely large, more and more companies are investing in the production of biodegradable, compostable or at least, recyclable coffee capsules from environmentally friendly materials. We can be sure that this trend will not only be maintained this year, but will prevail in all the coming years.

Healthy and Alternative Drinks: Both the vegetarian and the generally healthy lifestyle are among the biggest changes that man has adopted, at least in the West, in recent years. In this context, there are many who are looking for coffee substitutes, but this is not something that seems to dominate the market. On the contrary, vegetable milks are constantly gaining ground, they are found more and more easily and when the focus returns to its normal rhythms, it is almost certain that they will find their place in the relevant stores.

Single Origin Coffees: Coffees of unique origin have always been about a dynamic and informed public, which however seems to have expanded in recent years. The quarantine, the forced stay at home, the involvement with coffee on a more personal level, seems to have turned many people to the search for single-variety coffees and to explore their delicious wealth. It remains to be seen whether this widening of the audience is something temporary or something that will remain a predictable size - it all points to the latter.



Whatever the trends that will shape summer coffee, the only sure thing is that coffee ... never dies, as it counts neither pandemics nor restrictions, and continues to give us its unique taste, whatever if it happens.
