Hot and exotic Bajigur Coffee from Java

Coconut, spices and coffee in a unique recipe.

Bajigur is a traditional drink from the island of Java in Indonesia, known for its sweet and sour and spicy taste. Its main ingredients are milk and coconut sugar, combined with various spices, the most common of which are ginger, salt and pandan leaves. Although it is much older than coffee, the cultivation of coffee in Indonesia did not leave it unaffected, so the traditional Bajigur was first enriched with Kopi Tobruk, an Asian coffee that resembles our Greek, and then with filter coffee, while today It is prepared with any coffee, even with espresso or instant.

For anyone who loves spices and exotic fragrances, Bajigur will become his favorite, snug winter drink. Those who are accustomed to more conventional flavors, do not miss anything to try a few sips of a really special coffee - they will literally drink Indonesia in a glass!

 

What do you need for an exotic Bajigur?

200 g coconut sugar
1 liter of coconut milk
2 espresso
Pandan leaves
Five carnations
A pinch of salt
Ginger


How is Bajigur prepared?

On low heat, mix the coconut milk, sugar and spices
Once it boils, remove from the heat, add the two espresso and stir gently
Serve in glass cups


Tips for the most comfort Bajigur cups

Bajigur does not have a strong coffee taste, as the aromas of spices and coconut predominate. To emphasize the taste of coffee, we simply increase the espresso we use.
Filter coffee, or in some cases even instant coffee, is traditionally used in Indonesia, but espresso adds a stronger coffee aroma and a denser texture.
It is a comfort and warming drink, which is ideal for cold afternoons, with a blanket and a good movie!
Beating it in an ice shaker, we have the icy, equally exotic version.
Pandan leaves are an aromatic plant found in Southeast Asia that resembles lemongrass and has a vanilla aroma. If we do not find it in a store with ethnic products, we can put some Madagascar vanilla.
The drink is quite sweet, as befits the Indonesian coffee culture, but it is very sweet for our tastes, we can soften the sugar.
