Easy Banana Bread with coffee flavor

The ultimate cake for delicious breakfasts.

It was one of the internet stars of the recent quarantine, a recipe that due to its simplicity and taste was prepared by thousands of excluded people all over the world. The reason of course, for Banana Bread!

Banana Bread started in the USA in the 1930s and quickly gained great popularity, for two main reasons, on the one hand the release of baking soda, which made puffing the cake easy, and on the other hand because it was an easy solution to use bananas, which were expensive at the time of the Great Depression. Over the years, Banana Bread has become so popular that National Banana Bread Day is celebrated in America today, which is celebrated on February 23rd.

In recent years it has begun to become popular in Europe, mainly through the internet, as it is an easy recipe, with cheap ingredients, which does not require skill and technique and, in the end, very tasty. Our version has - of course - an extra coffee twist, which makes it ideal for breakfast snack.

 

What do we need for a coffee-flavored Banana Bread?

250 grams of butter
400 grams of sugar
3 large ripe bananas
2 eggs
2 cups flour
1 tablespoon baking soda
Or a teaspoon of salt
1 cup strong coffee
1 tablespoon cinnamon
1/2 cup of chocolate chips


How to prepare Banana Bread with coffee flavor?



Prepare the coffee and let it come to room temperature
Preheat the oven to 180 C, in the air
Mix the butter (at room temperature) with the sugar
Melt the bananas, and add it to the mixture, along with the eggs
In another bowl, mix salt, baking soda and flour
Add the coffee and flour to the banana mixture, alternately, until you have a single mixture
Add the chocolate pieces to the new mixture
Bake for about an hour

Leave to cool, cut into pieces and serve


Tips for delicious Banana Bread with coffee flavor

 - Banana Bread must be crispy on the outside and moist on the inside. Check if it has been cooked properly with the "toothpick test"
- You can use filter coffee, espresso, or even instant coffee (with which, the taste of coffee will definitely be more intense)
- In case you use espresso, we definitely need three espresso (approximately 100-120ml), while it is better to choose an intense and strong blend.
- You can replace the pieces of chocolate with nuts (hazelnut, walnuts or almonds)
- Bake in a buttered / oiled cake pan, which we do not fill more than halfway, as the Banana Bread will swell, gaining in volume.
- Keep children away from Banana Bread, as it contains caffeine. Replacing coffee with yogurt or milk (less in quantity) we have a "virgin" banana bread, suitable for children.
 - bananas should be quite ripe and soft
- You can replace cinnamon with half a teaspoon of ground coffee.
It goes great with coffee and is ideal for breakfast!
