In the summer, every kitchen faces two "problems". One is the preservation of bananas and the other is homemade ice cream. Bananas are sensitive to high temperatures, and they are not good for storing in the refrigerator. So many times we end with black, damaged bananas that end up in the trash. On the other hand, ice cream, the most popular summer dessert, can be a nuisance for any kitchen: ready-made ice cream is expensive and full of calories, while homemade requires special equipment and time. The solution to both problems comes from the banana ice cream!
The use of ripe bananas (which would otherwise end up in the trash) as raw material for frozen desserts is quite old and has its roots in America. The bananas are first frozen and then beaten in the blender with ingredients that will enhance their texture, such as honey or praline, while a host of other ingredients, such as peanut butter, syrup or dried nuts can be used to enhance the flavor. In our version, we use a double espresso, which gives intensity and sweet and savory aromas to our sweet, making it look like a delicious gelato moka!
