Easy "ice cream" with just three ingredients.

Two big "problems" of summer are solved in the moment with an easy ice cream-like sweet.

In the summer, every kitchen faces two "problems". One is the preservation of bananas and the other is homemade ice cream. Bananas are sensitive to high temperatures, and they are not good for storing in the refrigerator. So many times we end with black, damaged bananas that end up in the trash. On the other hand, ice cream, the most popular summer dessert, can be a nuisance for any kitchen: ready-made ice cream is expensive and full of calories, while homemade requires special equipment and time. The solution to both problems comes from the banana ice cream!

The use of ripe bananas (which would otherwise end up in the trash) as raw material for frozen desserts is quite old and has its roots in America. The bananas are first frozen and then beaten in the blender with ingredients that will enhance their texture, such as honey or praline, while a host of other ingredients, such as peanut butter, syrup or dried nuts can be used to enhance the flavor. In our version, we use a double espresso, which gives intensity and sweet and savory aromas to our sweet, making it look like a delicious gelato moka!

 

What do you need for the "fake" espresso icecream;

  • 3 big, ripe bananas
  • 1 tablespoon Nutella or Merenda
  • 1 double espresso
  • Wallnuts or coffee beans, to server

 

How is the fake espresso ice cream prepared?

  • Slice the bananas, and place them in the freezer.
  • Leave them on until they are completely frozen.
  • Prepare the espresso, and after coming to room temperature, put it in the refrigerator for half an hour
  • In a strong blender, add the bananas, praline and espresso.
  • Mix for a few seconds, until our sweetness has a fluffy ice cream texture.
  • Serve with broken hazelnuts.

 

Tips for a delicious "fake" icecream

  • Your bananas should be very ripe, to the point where they are starting to turn black.
  • Place the bananas in the freezer for at least six hours. You an store as many banana slices as you want, so we can have ice cream ready quickly and easily whenever we want.
  • The ice cream is to be consumed immediately and should not be stored in the freezer again. However, if you want it tighter, you can freeze it again for 15-20 minutes but no longer.
  • Espresso ice cream is not suitable for children because it contains caffeine. You can skip the espresso and add some more praline, resulting in a delicious  chocolate semifredo.
  • You can use whatever espresso you want, however a Robusta-rich blend will give our sweetness the necessary intensity
  • There is no need to add sugar, since both ripe bananas and praline are naturally sweet. If you insist, we can add a little honey, which will help improve the texture of the sweet.

 

The summer is ending, but the weather will still be mellow for a long time and we will continue to enjoy ice cream. Fill the freezer with ripe bananas - make some espresso whenever you want ice cream and you will have delicious coffee ice cream in seconds!
