We have seen many coffee-based sweets, but also many popular desserts become coffee twisted. We present such a caffeinated variation today, "teasing" a popular exotic dessert, from distant Asia: the Brazo de Mercedes!

Brazo de Mercedes is a Filipino dessert, which can be translated as "Mother Mary's Arm". It is essentially a meringue roll, filled with jam, cream, chocolate or whatever comes to the confectioner's mind. Brazo de Mercedes has its roots in the Spanish colonial era, and urban legend has it that it originated with craftsmen in catholic churches, who used eggs as an element of various church decoration styles - hence its strange name.

Although particularly impressive in appearance, the "Mother Mary's Arm" is easy to prepare, requires simple materials, while offering special flexibility, since it can be filled with whatever we want. In the version we present, it is filled with delicious coffee cream, while its meringue is enriched with coffee. We can not think of anything better to accompany our afternoon coffee!

 

What do we need for a Brazo de Mercedes with a coffee aroma?

10 large eggs
A tablespoon of cream
1 tablespoon vanilla extract
One cup of granulated sugar
3 tablespoons powdered sugar
400 ml evaporated milk
4 tablespoons instant coffee


How do we prepare Brazo de Mercedes with coffee aroma?



Separate the egg whites from the yolks very carefully

Add 2 teaspoons of egg whites, and the cream. Beat in a meringue, gradually adding the granulated sugar.In a preheated oven (180 degrees) and on baking paper or greaseproof paper, bake the meringue for 20-22 minutes, spread out.
Prepare the filling: on low heat and stirring constantly, boil the milk, the rest of the coffee and the egg yolks, adding the vanilla
Leave the meringue to cool and sprinkle with icing sugar
Place oil paste on top of the meringue, and with the help of a pan, turn it over
Spread the filling and wrap a roll with very careful movements
We serve!


Tips for a successful Brazo de Mercedes

The final appearance of the dessert requires experience and a form of skill in the movements, while the meringue must have the right texture. We will not be disappointed if we do not succeed with the first one!
If we do not succeed, we can crush the meringue, and serve it with the cream, in a homemade "Pavlova" with coffee flavor - it will be just as delicious.
We keep our dessert away from children, because it contains caffeine. Replacing coffee with cocoa, we make a kid friendly version with chocolate.
Beware of those who have a problem with their cholesterol: the dessert contains not one, not two, but 10 whole eggs!
We use instant coffee for a more intense taste, a little easier.
The dessert goes well with afternoon coffee or even tea.
Care must be taken when boiling the cream, so that the yolks do not "cut", but also so that our cream does not have an unpleasant egg smell.
