Muffins, small fluffy cakes with different flavors, are not missing from any breakfast buffet. Extremely popular in both Europe and America, sweet or savory, they are almost synonymous with breakfast and brunch. They combine perfectly with coffee and tea, and change dimension, if we spread them with a spread.

Our muffins, as you can imagine, taste ... brown, and in fact for two! The dough of the fluffy muffins is flavored with strong coffee, while the spread for serving is made of cream cheese and instant coffee, for extra caffeinated enjoyment. Easy to prepare, delicious and addictive, Cappuccino Muffins will become your new favorite weekend breakfast habit.

 

What do we need for Cappuccino Muffins?

For the Coffee Spread:

120 grams of cream cheese
1 tablespoon sugar
1 teaspoon instant coffee
Or teaspoon of vanilla extract
50 grams of chocolate drops


For Muffins:

440 grams of flour
170 grams of sugar
2 teaspoons baking powder
A little cinnamon
A little salt
200 ml milk
2 tablespoons instant coffee
1 large egg
1 tablespoon vanilla extract
150 grams of chocolate drops
Or a cup of melted butter


How do we prepare Cappuccino Muffins?

In a blender, mix all the ingredients for the spread, until the mixture is homogeneous. Transfer it to the refrigerator and keep it covered
In a bowl, mix the flour, sugar, cinnamon, salt and baking powder and in another the milk, coffee, butter, eggs and vanilla.
Pour the "liquid" ingredients into the "solids" and mix. Add the chocolate drops.
Fill buttered muffin tins by 2/3 and bake at 190 degrees in the air in a preheated oven. Allow to cool for at least 10 minutes and serve with the coffee cream.


Tips for super tasty Cappuccino Muffins

Use instant coffee, for a more intense, concentrated taste
Replace the vanilla distillate with petimezi, or even with a little honey
You can use more or less coffee in our spread, depending on how strong we want its taste.
Muffins are kept covered (for example, in a bread oven) for several days.
Spread with the spread immediately before serving, so that our Muffin does not "wither"
They are ideal for breakfast or brunch, as they go well with coffee
Of course, this is not a diet recipe, as it has plenty of butter and sugar, so it is not something we will enjoy every day.
It is not suitable for children, as it contains instant coffee, and therefore caffeine.
If we want the taste of coffee in muffins even more intense, we can skip the chocolate drops, both in the muffins themselves and in the spread.
