Egg Coffee from Scandinavia: an ancient method of extracting coffee with primitive media.

How to serve delicious coffee when you don't have a filter? But of course, with one egg!

There are coffee recipes that are loved for their authenticity, effectiveness and taste, such as espresso and its variants. There are coffee recipes that impress with their originality and others that evolve the coffee culture a little further. But there are also some recipes that, while not promising original overwhelming flavors, are pieces of coffee history that give us their own emotions. One such recipe is the Scandinavian Egg Coffee recipe!

Egg Coffee's recipe originated in the late 19th century, and although originally from Scandinavia, it actually flourished in the US. According to tradition, the recipe was invented in the Sunday churches of Swedish and Norwegian immigrants to the US - hence the other name of this cafe is "church coffee". So, looking for ways to make large quantities of coffee, with minimal equipment, which at the same time taste good and leave easy-to-clean utensils, the Scandinavians invented the "egg-coffee", a coffee in which the egg acts as a filter!

Indeed, this particular coffee is not characterized by dense texture, such as eggnog or various Asian eggs. On the contrary, it is very clear, with a distinct, pleasant aroma and complete absence of any bitterness. The addition of the egg "cleans" the coffee, helping to make it clearer, while for an indefinable reason it reduces bitterness without reducing its caffeine. Also, the egg collects the coffee grounds, so filtering is not required, and cleaning utensils is simpler.

Certainly, it is not a way of making coffee that will replace our machines or make us change habits. But it is never ending an unfamiliar piece of coffee history, but also an alternative brewing method for those who love experimentation. Finally, it is a method ideal for camping or vacations, but also a way to try a different perspective on filter coffee.
