Enrich your daily coffee with homemade espresso cookies!

There is no doubt that the best accompaniment to an espresso is a delicious, freshly baked biscuit. Better yet, if we talk about homemade espresso cookies!

Coffee, whether we enjoy it with our breakfast or during the day, becomes even more enjoyable with the help of several accompanyings. From the traditional loukoumi that accompanies Greek coffee, to the Italian biscotti that perfectly match  espresso, it is a fact that a small sweet can take off the enjoyment of our daily coffee.

Although there are many choices available on cookies that are designed to match coffee, it is not a bad idea to cook our own handmade biscuits and give a distinct character to both our breakfast and a coffee with friends . We can even give biscuits a coffee flavor by simply adding ground espresso to the biscuit dough! The recipe is simple, easy, it is adressed to both beginners and advanced cooks and does not require special craftsmanship in pastry - just love for coffee and biscuits, which we all have!

 

For the espresso flavored cookies, you will need:

  • 1 ½ cup of all purpose flour
  • ½ cup of unsweetened cocoa powder
  • 1 full tablespoon ground espresso
  • ¾ cup of powdered sugar
  • 1 cup of butter at room temperature
  • 1 vanilla capsule

 

How to prepare the espresso cookies:

  • Preheat the oven to 180 degrees, in the air functioning
  • In a bowl, sift and stir the flour, cocoa and ground espresso
  • In another bowl, knock in the mixer at low speed butter, powdered sugar and vanilla for about four to five minutes until the mixture is homogenized.
  • Add the flour mixture to the butter mixture with gentle movements to make it homogeneous
  • In a baking pan, lay non-stick wax paper
  • Form with your hands balls from your dough (calculate about 2 ½ tablespoons for each biscuit). Push the fork to give them a flat figure
  • Bake for 15-20 minutes, depending on the intensity of your oven.
  • Let the biscuits cool down and serve with coffee.

 

Tips for the best espresso cookies:

  • It is especially important that  butter shoud be at room temperature, otherwise your dough will not have the proper texture and will not be cooked properly.
  • You can increase the espresso dose or use less cocoa if you want the coffee flavor to be stronger. Do not overdo it with espresso, because your biscuits will end up bitter.
  • Do not make discounts on coffee or cocoa:  use good quality ingredients to make the taste of our cookies rich.
  • You can decorate your cookies with whole coffee beans: Before baking,  place a coffee bean on the top of each biscuit.
  • You can add lots of ingredients in your cookies, such as chocolate chips, nuts or dried fruits - although this will disorient a bit from the taste of coffee, which is what is wanted.
  • Because each oven is different, to make sure your cookies are baked, do the toothpick test: sink a toothpick into the biscuit until it's center. If it comes out "clean", the cookie is ready, if it comes out wet or with dough residue, bake a bit longer, possibly lowering the oven's volume.
