One of the things that comes to mind when you think of Morocco is undoubtedly exotic spices. These intoxicating perfumes have gone through Morocco's daily coffee, making it very enjoyable.

Coffee has deep Arabic roots, since, although it comes from Ethiopia, its propagation is due to the Arab world. In addition to laying the foundations for world coffee dominance, the Arabs have developed their own, distinct traditional recipes for coffee preparation, many of which survive to this day, having a distinctive character and unique aromas.

Arabic coffee is traditionally prepared with the method we now call "Greek" and formerly "Turkish" coffee, but what gives it its distinctive character is the wide use of spices and aromas such as cardamom, ginger, cinnamon and asteroid aniseed. The use of many spices probably has its roots deep back in time, and is either related to the "magic" nature of coffee and its use in religious rituals or (more likely) to the fact that coffee in the 15th-16th century was significantly bitter than nowadays, so spices were used to improve the taste of the coffee beverages.

The particular aromas that add spices to coffee make up the character of Arabic coffee up to now. The main difference with the other flavored coffees lies in the fact that the spices are not added to the cup, but are extracted with the ground coffee, which results in a richer aroma and more complex flavor. In the recipe that follows, we chose the filter extraction, while the spices we use are the spices used are those customary in Morocco. The aromatic, Moroccan coffee is particularly enjoyable in winter, as its oriental flavor makes it ideal for cold winter afternoons.

Tips for a sucessfull Moroccan Coffee

  • Moroccan coffee is strong, as the Arabs love dark blends. If you use coffee in beans, prefer a dark roasted blend, if we use ready-made, ground French coffee, prefer a strong coffee, such as Eduscho Premium Strong.
  • If you use coffee in beans, it is a good idea to get your spices whole, so that you grind them along with the coffee beans.
  • Even if you drink your coffee simple, a little sugar and a few drops of milk will help the coffee bring out its special aromas.
  • You can use the spices of Moroccan coffee in different brewing methods such as in Greek or even in Cold Brew. Espresso, however, due to its nature, is not suitable for these flavors.
  • You can serve it along with oriental sweets such as a small piece of baklava or a greek delight, but also with a glass of cool water flavored with rosewater

With the first really cold days of winter, when we start the house gathering for table games, films or just a cup of coffee, we can make our home mumble east, preparing a coffee from distant Morocco!
