The most popular Italian dessert: discover the recipe for authentic Tiramisu!

It is known that Italians love coffee - as is also known their habit of closing every dinner with a small espresso! It should not be surprising that even the most classic Italian dessert, which is the epitome for most Italian dinners, whether in a home or in a restaurant, is a sweet with a strong coffee flavor: Tiramisu!

Tiramisu, although it is now considered, and is, a classic, traditional Italian dessert, has a very short history, since in the form we know it appears in northern Italy in the 1960s, with the sharp increase in popularity of just 20 years later. His paternity is still borne by Venice, Trieste and Treviso, but it is known that if a concept is good, it appears at the same time in many places, and probably it happened with Tiramisu. In fact, Tiramisu took on preparations made by other popular Italian sweets, minimized the required materials and gave the necessary tasting guest with the addition of espresso - so winning the hearts of not only the Italians but also all the gourmets and coffee lovers worldwide .

The authentic Italian tiramisu is a manifestation of simplicity, as it consists of fleshy materials: egg yolks, mascarpone cheese, sugar, ladyfinger cookies, cocoa and, of course, espresso. Unfortunately, the versions we encounter in commercial patisseries or, worse, in supermarkets, usually borrow only tiramisu's name - and a light, anemic taste of coffee. In authentic tiramisu, the taste of coffee should be dominant. Besides, the name of Tiramisu can be translated as "wake me up", which is a clear indication of how intense the nature of espresso must be in the sweet.

Of course, we can prepare tiramisu based desserts experimenting with various materials - the most common variants replace the espresso with coffee liqueurs or the cream made by marry mascarpones and eggs with a simple pastry cream. But if someone tries authentic tire treasure, there is probably no ... return!

 

What do you need for an authentic tiramisu? 

  • 4 eggs
  • 4 tablespoons of sugar
  • 2 espressos
  • 2 tablespoons marshala wine (optional)
  • 250 gr mascarpone cheese
  • 30 ladyfingers cookies
  • Bitter cocoa for serving

 

Ηow is the authentic tiramisu prepared?

  • Prepare the espresso. If you use marsala, mix it with the coffees and let them come to room temperature
  • Carefully separate yolks from the egg whites
  • Beat the egg whites in fluffy meringue
  • In another bowl, beat the egg yolks until they are homogenized (about 4-5 minutes depending on the mixer)
  • Add the mascarpone and continue with the mixer until it is homogenized
  • Then add the meringue with gentle moves until it is fully incorporated into the mascarpone mixture.
  • Saffirch the ladyfingers in the coffee for a few seconds. They should absorb the taste of the coffee, but not soak, because the texture of the sweet will be destroyed
  • Place the materials in a wide pyrex, as follows: a layer of cookies, a layer of cream, another layer of cookies, another layer of cream.
  • Garnish with cocoa sifter
  • Place in the refrigerator for at least 2-3 hours
  • Serve with an espresso or with a grappa shot

 

Delicious for the tastiest Tiramisu you have ever imagined

  • The original recipe includes raw eggs. Only use eggs for which you are absolutely sure of both their quality and their freshness, otherwise it is best to avoid them.
  • Marshala wine offers a small, pleasant aroma to the dessert's taste and is used in many Italian restaurants. If you want a stronger coffee flavor, you can omit it.
  • It is better not to replace the marshala wine with "heavy" spirits such as rum, whiskey or coffee liqueurs, because they tend to affect the dessert's taste.
  • The traditional recipe assures that the layers of sweet are placed in a transparent round bowl, or in a salad bowl. As this requires a degree of skill and experience, you can easily make it without any difference in a rectangular pyrex.
  • Soaking the cookies requires great care. The Ladyfinger must absorb coffee so that they are delicious, but not soaked, as the tiramisu texture will be rubbed and destroyed. Immerse for a few seconds in a coffee at room temperature.
  • If you can not find mascarpone, we can replace it with a combination of cream cheese with ricotta - but our result will be deliciously inferior.
