Although the calendar year begins with New Year's Eve, the beginning of autumn essentially marks the beginning of the new season. The trends and tendencies that will dominate the coming period have already taken shape and slowly, along with the return to everyday life, the landscape of habits that will occupy us in the coming months begins to be erased.

Coffee, of course, is not unaffected by all this! It may be timeless and classic, but it often changes form, is influenced by the fashions and trends of each season, being inextricably linked to the daily lives of millions of people around the world. In this context, we examine the aspects that coffee will take in the autumn and winter that lie ahead of us, examining five coffee trends for the season that is just beginning.

 

Five Coffee Trends for Fall 2025

Coffee and Artificial Intelligence: As artificial intelligence has entered almost every aspect of our daily lives, it is entirely expected that it will also find its place in the coffee industry. From AI applications in home and professional coffee machines, to apps that recommend blends and recipes through algorithms, the onslaught of artificial intelligence will not leave our favorite beverage unaffected. Although we are still far from the time when a multitude of coffee-related professions may be replaced by artificial intelligence programs, the transformation has already begun.

RTD beverages are gaining ground: In the frenetic pace dictated by the post-covid era, ready-to-drink beverages seem to be constantly gaining ground and this is expected to continue this year. From bottled ready-to-drink coffees to the resurgence of instant coffee and its acceptance by an audience that until a few years ago did not appreciate it, the scales seem to be tipping in favor of convenience and speed.

Iced coffee is back to stay: The “fourth wave of coffee” that we have been experiencing in recent years is characterized, among other things, by the return and consolidation of cold coffee. Gaining great popularity among representatives of Gen Z, iced coffee is capturing a large share of the market, even in countries like Italy, where the daily coffee ritual was anything but conducive to such “modernities”.

Sustainability and Health: With environmental protection and the shift to healthier solutions becoming a consumer trend, more and more coffee lovers are turning to beverages that either respect the environment or promise additional health benefits. Coffee from sustainable agriculture, reduction of plastic packaging, drinks enriched with superfoods are just some of the habits that will concern us in the season that is starting.

Coffee as an experience: The frantic price rally that coffee has been engaged in in recent years (a multifactorial problem, which affects all sectors of the coffee industry chain) has resulted in a change in consumer attitudes towards coffee. The inexpensive daily habit of yesterday is largely changing into an "experience": the consumer is asked to pay more for his coffee, and this naturally creates additional demands. This translates into a search for higher quality blends, imaginative packaging and a greater openness to experimentation, which affects all entrepreneurs related to coffee.


The second most popular beverage in the world after water may change forms, shape trends, and be influenced by the spirit of each era, but the only thing certain is that it will continue to concern us and be a key part of our daily lives, in one way or another.
