What do we need for Light Mousse Coffee?
200 grams of yogurt
240 grams of cream cheese
120 grams of cream
1 – 2 tablespoons of sugar
1 double espresso (60 ml)
How do we prepare the Light Coffee Mousse?
Prepare the espresso and dissolve the sugar while it is hot
Let it cool down well
Mix the yogurt and cream cheese in a bowl
Beat the cream well and set aside
Add the coffee to the yogurt-cheese mixture, and homogenize
Let it rest in the fridge before serving.
Tips for Fluffy, Light Coffee Mousse
The more complete in fat our three main ingredients are, the more satisfying the texture of the mousse will be. If we choose to use light products, the texture might not be ideal.
If we want to be sure of our mousse, we can add a little gelatin, although it is not necessary.
We can also make it with instant coffee, dissolving 1-2 tablespoons in 50-60 ml of water. The taste will be more intense, but also slightly more bitter and not so aromatic.
Before placing the mousse in the refrigerator, it is good to divide it into individual bowls.
We can serve with coffee beans, chocolate flakes, sprinkle with some instant coffee, or serve it over crushed cookies, like an improvised crumble.
