Every now and then, new trends and fads pop up in the coffee space, spreading like wildfire like sparks. One such trend, which is part of the general shift of consumers towards healthier products, is the trend of dewaxed coffee, which is showing upward trends abroad and will soon become a topic of discussion in our country as well.

What do we mean by dewaxed coffee?

The term dewaxed (in Greek can be translated as "dewaxed") refers to the removal of a class of lipids found on the outer surface of the raw, raw coffee bean, and referred to as waxes, due to their form. Although these lipids do not constitute even 0.5% of the total lipids of green coffee, they are hardly absorbed by the body and are not easily digested by the stomach. Each kilogram of roasted coffee contains from 600 to 1000 mg of waxes, which can be particularly unpleasant for those with sensitive gastrointestinal systems.

 

How is the "dewaxing" process done?

The goal of the waxing process is for the waxes in the coffee to not exceed 250 p.p.m. For this reason, a method is followed that resembles the corresponding method of removing caffeine, using the chemical element dichloromethane, which has the ability to remove most of these unwanted lipids, without affecting its taste, quality or aroma coffee. It is worth noting at this point that while all decaffeinated coffees are dewaxed, the reverse is not true. The removal of cerolipids reduces the caffeine content, but does not make the coffee decaffeinated, as this requires additional, different processes.Finally, for the dewaxing process, there are specific conditions that must be met, in order for a coffee to be called dewaxed and marketed with this label.



How is dewaxed coffee different?

The process of waxing the coffee preserves its quality and does not affect its taste and aroma, but the coffee has a lighter feel, a rounder character and perhaps a more tamed intensity. Also, its acidity drops significantly, emphasizing more its sweet notes, while the caffeine is usually relatively reduced, but definitely present. The most important difference of a waxed coffee is that it is significantly easier to digest, without irritating the gastrointestinal system even of people who have sensitivities and who may be affected by conventional coffee.
